2. Best for a vintage dim sum cart experience in Hong Kong: The Red Star Restaurant
In Singapore, dim sum is often served in hotels and Chinese restaurants as part of a larger menu. So when Ow wants a classic, vintage dim sum experience, she heads to Red Star Restaurant near Pearl’s Hill City Park. “Because when you enter this place, time stops,” Ow said. “You have to take an elevator up to the seventh floor to visit the restaurant. And when I go in, I feel like I’m going back to the 1970s. It’s a very nostalgic Chinese restaurant, all red, with old lanterns. And what’s so special about their dim sum is that they put their dim sum on carts.”
Ow explained that cart dim sum is a dying tradition in Singapore. “You don’t see that very often anymore. But yeah, they’re very well known for their dim sum carts, so [the waiters are] everyone is wearing green uniforms, and they will go around from table to table asking if you want anything from the cart.
When Ow visits the Red Star restaurant, she opts for the banana fried shrimp roll and the char siew bao (grilled pork bun). “They basically make their own bao,” she said. “[That’s the] a steamed bun, then you get this sweet and savory roast pork. It is red in color. And they usually shred it. So when you eat it, it is very juicy. You get the sweetness and flavor of the pork itself. » She added: “I hope this makes you hungry.” »
