Democracy dies in darkness
This equal parts cocktail swaps gin for a smoky mezcal, playing it with an herbal, bittersweet gentian liqueur. Try different gentian liqueurs – with bright yellow Suze, the cocktail is more earthy and grassy, highlighting those notes from the mezcal. With other gentian liqueurs such as Salers, Don Ciccio’s Cinque or Luxardo Bitter Bianco, you will get different results, depending on their different botanicals.

Place a large ice cube in a rocks glass. Fill a mixing glass halfway with ice. Add the mezcal, liqueur and Cocchi and stir to combine and refrigerate for about 10 seconds. Filter into the glass. Twist the zest to express the oils on the surface of the drink, then drop it into the drink and serve.
