This easy French apple cake has just enough batter to hold all the apples together. The cake is one of the softest we have ever had with an almost custard texture and a sweet, crisp top. This is truly one of the easiest cakes we have ever made, but make no mistake about it. It is still one of the best cakes we have ever had. The simplicity makes it even more enjoyable.

plus 1 tbsp. granulated sugar, divided
pure vanilla extract
medium-tart apples (such as Granny Smith or Honeycrisp), peeled, seeded and chopped

- Preheat the oven to 350 ° with a rack in the middle position; Lightly coat an 8-inch round cake pan with cooking spray. In a medium bowl, combine flour, baking powder and salt.
- In a large bowl, whisk the eggs until frothy. Add the melted butter, 3/4 cup sugar, rum and vanilla and whisk to combine. Add the dry ingredients and stir with a wooden spoon or rubber spatula until evenly incorporated. Stir in the apples. Transfer the dough to the prepared pan. Sprinkle the top with 1 tablespoon of the remaining sugar.
- Bake until golden brown and toothpick inserted in center comes out clean, about 55 minutes. Let cool for 15 minutes before returning to a cooling rack to cool completely.
